The word “Mandalorian” is not the name of a species, but rather a Clan of various species who met on the planet #Mandalore (and were united by a common Culture, |Creed & Code ... "This Is The Way.").
I'm having trouble finding 'where they got the name "Mandalore" (either in-universe or in writing the story). The first thing I find is facts about the development of Mandalore's written- & spoken-language (Concordian Mando'a). ... Oh, STAR WARS LEGENDS informs us that Mandalore was named after its conqueror Mandalore the First.
Whether it's 'what his name came to mean' or 'what the name's roots actually meant,' that word is now built on ancient words that mean "the Sole Ruler" (the 'king' of Mandalore is "The Mandalore").
