I don't remember how that word came up (probably when I was thinking about french fries and remembered how my father would 'cut up potatoes that way' to make them)—I felt like there might be something more to that word ... something crucial that firms the foundation upon which the linked vegetable-cutting method builds ...
The word “Julienne” is built on “in the Manner of Julien (Julian ... an otherwise unknown Cook—possibly a French Caterer in Boston (Massachusetts))” (first, a Clear Soup made of Chopped Carrots & other Vegetables in Meat-Broth; then, vegetables Cut into Thin Strips).
